Apple Honey Pound Cake w/ Apple Cider Glaze Submitted by Beth King
This judges couldn’t stop eating this cake! And when we put it out on the table for Market visitors to taste, it was getting 2 thumbs up all the way around!
Preheat oven 350 degrees.
Grease and flour a fluted tube cake pan.
Ingredients:
Cake :
2 cups of sugar
1 ¼ cups of Vegetable Oil
¼ cup of vanilla yogurt
3 Large eggs
2 tsp vanilla
2 tsp almond extract or flavoring
1 Tbsp of honey
3 cups of all-purpose flour
1 tsp of baking soda
1 tsp salt
1 tsp ground cinnamon
2 tsp cinnamon sugar
3 gala apples, peeled and chopped small
½ cup of chopped walnuts
Apple Cider Glaze:
½ cup of spiced apple cider
½ cup of packed brown sugar
2 Tbsp of butter
In a large mixing bowl, combine the first 7 ingredients and mix well.
In a separate bowl sift the 5 dry ingredients together. Now, mix with the wet ingredients till well blended. Gently fold in the apples and nuts. Pour into tube pan and bake at 350 degrees for 1 ¼ - 1 ½ hours or until toothpick in the center comes out clean. Cool 15 mins before removing from pan.
Glaze: In a small saucepan, combine cider, brown sugar and butter. Cook over low heat until sugar is dissolved. Poke small holes all over the top of the cake with a fork and slowly drizzle with glaze. |
